This intensive three-day craft distillation class will be geared toward distillers in established DSP's who wish to take their distillation practices, & procedures to a more advanced level.
The class will focus on topics such as:
  • Making heads cuts organoleptically, analytically, and by fixed volume methods
  • Using proof control to make tails cut easier to find
  • Types of reflux control and how to use it to optimize hearts cut without sacrificing quality
  • Inexpensive still modifications that can make operations easier and yield more hearts per run
  • Methods of handling heads and tails to recover additional product without jeopardizing quality
  • Still design parameters for differing types of spirit and how to optimize for multiple products.

In the hands-on portion of the class, we will operate a column and kettle type still using a number of differing techniques to demonstrate the breadth of control options available to a craft distiller.
